The Egyptian varieties: we in Egypt have distinguished varieties like Azizy olives -They are large sized starts from 80/100- ,the pecuel type and kouprosy type it is somehow like Manzanilla type. it’s very good for oxdidatin. they are mostly cultivated in desert of wadi El natrwon. They account for more than 50% of the total table olive production of Egypt. Egyptian olives variety are large sized, with a coninal-cylindrical shape ending in a nub. Their size means they can be presented in many ways, including stuffed with complementary foods such as jalapeno, Carrots and lemon. Egyptian olives are hand picked from their trees while still green, so the harvest begins earlier than with other varieties, between the middle of August and middle of October.
